The Ruta del Queso winds through the Sierra Norte de Oaxaca, connecting remote Zapotec villages where families still make traditional string cheese using techniques passed down for centuries. This mountain circuit starts in Ixtlán de Juárez and climbs through cloud forests to reach La Cumbre at 10,200 feet, where the temperature drops 30 degrees and the air gets thin enough to notice. The route includes a notorious creek crossing at Río Grande that washes out every rainy season, forcing locals to rebuild the stone ford annually.

This moderate to difficult route demands high-clearance 4WD and decent driving skills for the rocky descents and creek fords. Best tackled during dry season (November through April) when the roads aren’t soup and the streams are manageable. Fuel up in Oaxaca City and carry extra water — services are sparse between villages. What you get is authentic Mexico: families selling warm tortillas from their doorsteps, kids herding goats across mountain roads, and views across valleys that stretch to the Pacific on clear days.
